Salada Tropical
A Brazilian meal is often accompanied by salad. Fresh salads are a perfect complement to hot meals – especially in a hot climate. Sliced pineapple is another popular side dish in Brazil. It is fresh and it contains an enzyme that helps digesting your meal. Pineapple can be eaten as a side dish on its own but it can also be combined with other ingredients –especially other fruits- in Salada Tropical. There are many varieties of this Brazilian dish. Take this recipe as a start of your experiments!
Ingredients
(quantities per person)
- 1 chicken breast
- oil for frying
- ¼ can of pineapple
- ½ can of maize (or ‘corn’ in American English)
- ½ apple (acid but of course ripe)
- 60 gr (2.1 oz) ham
- 25 gr (0.9 oz) raisins
- mayonnaise
- salad
- a little bit of salt
Preparation
Fry the chicken breast in some oil and with a little bit of salt. When the chicken breast is well done, cut it evenly in squares. Chop also the apple, the pineapple and the ham in little squares. Mix all ingredients in a bowl and season with mayonnaise. Put it in the refrigerator to cool down. Use some salad leafs as a garnish. Serve cool.
Variations
- Peel and chop evenly some potato in small cubes. Cook until tender. Mix them with the salad.
- Use green grapes instead of raisins
- Use crème fraîche or sour cream instead of mayonnaise
