Curau or Mingal de Milho

In the Northeast of Brazil, this dessert is called curau, in the Southeast it is called mingal de milho. It is a pudding made of maize that is usually dressed with cinnamon.
Ingredients:
- 4 maize cobs
- 2 1/2 cup of milk
- Pinch of salt
- 2 teaspoons of butter
- 2/3 cup of sugar
- Cinnamon to taste
Preparation:
Cut the grains off the cobs (hold the cobs vertically and cut downwards). Put the grains and the milk in the blender and puree the maize. Sieve the mixture while pouring it in a pan. Use a wooden spoon to press the last liquid out off the maize. Add the salt, the sugar and the butter and bring to a boil while stirring with a wooden spoon. Cook until thickened (keep stirring!). Poor it in a bowl, cover with cinnamon and allow to cool. Once it has cooled down, put it in a fridge to cool further.
