Cod (Bacalhau)
![]() Although cod is a fish from cold, northern waters, it is eaten a lot in Brazil. This habit dates from the colonial era and it is one of the many influences of Portugal on the Brazilian cuisine. Cod that is imported in Brazil is dried and salted. As it can be transported easily, it is the only sea fish that is popular in the Brazilian hinterland. This dried and salted cod has a characteristic taste. Before it can be used, it must be soaked overnight in several changes of water. It needs to be cooked only briefly but it requires to be boned carefully. |
