Coconut (côco)
Green, unripe coconuts and mature ones are both used in the Brazilian cuisine. The green ones are often sold by the roadside or –cooled- in shoppingcentres. The seller splits the top off with a machete after which he hands it to you. If the green coconut is old enough, you can eat the creamy inside after having drunk the juice. The seller uses the machete to split the coconut in half and creates a spoon of a part of the coconut.
Grated, mature coconut is often used for desserts or pies. Mature coconuts can also be used to produce coconut milk which is used in a large number of dishes.
